Ingredients: 1 bunch silverbeet; 2 teaspoons olive oil; 1 garlic clove (finely chopped), 1/3 cup (chopped walnuts), teaspoon finely grated lemon rind; 1 tablespoon lemon juice

Step 1:
Thoroughly wash Silverbeet. Remove leaves from stems, roughly chop the leaves.

Step 2:
Heat oil in a large, deep frying pan over medium heat. Add garlic and walnuts. Stir it for 3 to 4 minutes or until walnuts are toasted, you should be able to smell them, then add silverbeet. Keep on stirring the mix for 2 to 3 minutes or until just wilted. Add lemon rind and lemon juice together with salt and pepper to taste.

Suggestion 1:
Stems can be discarded or used, if you use them, chop them up finely and add them to the mix 2-3 minutes before the leaves, give them a chance to cook through and soften a little.

Suggestion 2:
If you are in the mood for a little bit of chilli, please feel free to add some chilli flakes to the mix together with salt and paper.
